Apple Cheddar Scones

77 F is the current temperature in my apartment. All the windows are open. The sun is shining. It’s October.
It might be 77 because I’ve had the oven set at 375F for a few hours trying to decide which apple goodie I was going to make.
I went with these scones. I don’t regret it. Especially since I just bought some apple cinnamon tea yesterday. Coincidence?
Yes, actually.
Ingredients
- 2 large apples or 3 small ones
- 3/4 cup whole wheat flour
- 3/4 cup white whole wheat flour
- 1/4 cup sugar (plus 2 Tablespoons for sprinkling)
- 1/2 Tablespoon baking powder
- 1/2 teaspoon salt
- 6 Tablespoons butter, cold, cubed
- 3/4 cup white cheddar cheese
- 1/4 cup heavy cream
- 2 large eggs
Instructions
- Preheat oven to 375 F
- Peel, core, and chop apples. Place on a parchment lined baking sheet and roast for about 20 minutes until they get a little bit of color.
- Once the apples have started to brown a little take them out of the oven and let them cool completely before adding to the batter. I put mine in the fridge.
- Combine flour, sugar, baking powder, and salt. Either sift or whisk together.
- Combine cooled apples, butter, cheese, 1 egg, and cream in a food processor. (If you don't have a food processor or mixer cutting the butter with two knives is also an option).
- Add flour mixture to the wet mixture and pulse or mix until just combined. Don't over mix.
- On a floured surface, lay out dough and combine so it forms about an inch tall circle. Cut into desired shape (I cut mine with a biscuit cutter into circles).
- Place scones onto a parchment lined baking sheet or greased baking sheet.
- Beat the other egg and brush on the top of the scones then sprinkle with a little sugar.
- Bake for 30 minutes until scones are cooked through.

Just a note: I didn’t combine the apples when Deb said to because I thought, “That will chop them all up!” So I just stirred them into the batter after it was combined. But when I was forming the scones I thought the batter was dry and crumbly. Probably because I didn’t do that apples like she said. Mine still came out tasting sweet and a little cheesy*. Perfect.
*cheesy like cheddar not a cheese ball like me
